◇Appetizer: Tiger prawns with yuzu miso, cloud eggs with ponzu sauce, chestnuts simmered in sake
Mackerel sushi, simmered egg, ginkgo nuts, turnip
◇Soup: Thin kudzu sauce, steamed turnip, tilefish, wood ear mushrooms, carrots
◇Sashimi: Thinly sliced cold flounder with ponzu sauce
Also, seared golden-eyed snapper, bluefin tuna, wasabi, and garnish
