Course menu

◇Appetizers: Ark shell, boiled abalone, yam somen noodles

Urui, rape blossoms, Tara buds, Tosa vinegar

◇Soup: Clear soup with fried kudzu, bamboo shoots, bracken, carrots, and kinome (leaf buds)

◇ Sashimi, parboiled Sakuradai, condiments, ponzu sauce

Also, thin fish, bluefin tuna, wasabi, and garnish

◇Appetizer: Steamed tilefish and clams in sake, white tofu, white leek, bracken, kinome

◇Sugi Karasumi Soba

◇Main dish: Charcoal-grilled Omi beef, grilled bamboo shoots, butterbur, Japanese pepper sauce

◇Rice, sea bream chazuke, pickles

◇Dessert: Strawberry and yogurt mousse with daigo sauce
