Course menu

Appetizer: Eel sushi, soft-boiled abalone, edamame, eggplant, green laver egg

Maruju: Trout yolk with vinegar, prawns, braised duck loin

Simmered dish soup with clear soup, peony conger eel, kudzu noodles, plum paste, yuzu

Sashimi, grilled conger eel, vinegared orange, Maldon salt, plum and soy sauce

Also, live abalone sashimi, bluefin tuna with liver soy sauce, and Tosa soy sauce

Grilled food: Live salt-grilled sweetfish with vinegared watercress

Appetizer: Shark fin with thickened sauce, winter melon, paprika, and ginger

Strong Appetizers: Charcoal-grilled Omi beef, abalone mushrooms, Fushimi chili peppers, fruit tomatoes

Meal: Eel and burdock rice cooked in a clay pot, pickles, red miso soup

Fruit: Mizubotan
