A kaiseki multi-course meal featuring Omi beef as the main dish, designed to delight all five senses.Meals are prepared with freshly cooked rice in an earthenware pot.

Appetizer Platter (3 kinds)

Octopus simmered in mineral water, sesame tofu, bamboo leaf-wrapped sushi

Soup dish: Clear broth

Sea bass with kudzu starch, fresh onion, raw wood ear mushroom, yuzu citrus, pickled plum paste

Sashimi: Today's three kinds of fresh fish platter, wasabi, and garnishes.

Relief meal: Green tea soba noodles, Japanese yam, roasted egg yolk, wasabi stems, shiso leaves

Grilled dish: Salt-grilled live sweetfish with tadezu (water pepper vinegar).

Main course: Charcoal-grilled Omi beef, round eggplant, bell pepper, baby corn

Rice (Clam rice cooked in an earthenware pot), Pickles, Red miso soup
